Ivy is one of the last major nectar sources of the beekeeping year, flowering from September into autumn when many other plants have finished. On warm autumn days, its flowers can provide an incredibly valuable late-season source of nectar and pollen for honey bees.
Ivy honey is quite unlike a typical summer blossom honey. It has a distinctive, full-bodied flavour and naturally crystallises readily, giving it a smooth, set texture. A fascinating seasonal honey that really captures a different part of the British beekeeping year.
